Analysis of Volatile Aroma Compounds in Different Commercial Cultivars of Pineapple (Ananas comosus (L.) Merr.) from Kerala

Abstract
The volatile compounds from four major commercial cultivars of pineapple in Kerala were studied by GC – MS technique. The fruit external aroma is excellent in cultivar ‘Mauritius’, mild in cultivar ‘Kew’ and ‘MD2’ and pleasant in cultivar ‘Amritha’. In the present study, analysis of volatile compounds in these cultivars was carried out and 35 volatile compounds were identified. Twenty-one compounds were identified from the cultivar ‘Mauritius’. Of these twenty-one compounds were identified. Twenty-one compounds identified from cultivar “Mauritius” only. The relative content of our compounds was higher in cultivar ‘Mauritius’ than the other cultivars. Ten compounds were detected from cultivar ‘Kew’. Nine compounds were identified in ‘MD2’ and ten compounds in cultivar ‘Amritha’.
